Choriatiki Babo continues to be prepared with art and passion by the Tiaka family for many years with the same favorite recipe. It is made from selected beef and pork with a mixture spices, leek and rice. It is cooked in the oven with abundance accompaniments but also forms the basis for a dreamy soup. In Evros and throughout Thrace, the traditional babo has won a place on the everyday table of consumers. It is cooked in the oven plain but also with potatoes, with oatmeal or rice but also as an egg-lemon soup.
